Finishing those potatoes

In the spirit of “using what I already have, I made Slow-Cooker Scalloped Potatoes from the remainder of a 10-pound bag of potatoes. I also made Cauliflower Tacos With Cashew Crema, which is a vegan dish. It was very tasty.

This isn’t even a cooking blog. I guess I’ve just been on a bit of a roll with the cooking and the “use what you have” idea. Have you done anything like this lately?

  1. Wonderful! I will try the cauliflower tacos for sure. Yesterday, I cleared out the veggie bin in the fridge and made a miso vegetable soup. You’d never guess it was made from tired looking wilted vegetables-so healthy and delicious. I also roasted a garlic bulb to add flavour and extra nutrition. All the bad bits went into the compost to feed the worms! Win win!
